Honey Chili Potato is a well-known street food from the Indo-Chinese recipe and a super addictive snack made up of crisp and deep-fried potato wedges, or potato fries. It is the yummiest, tangiest, and most spicy dish that balances the sweetness of honey with the heat of the chili and a little tanginess from vinegar.

For a quicker preparation method, you can use frozen potato chips, which are easily available in markets and are a convenient option for those who don’t have access to fresh potatoes. Simply follow the instructions on the packaging to fry or bake the chips, and then toss them in the delicious sesame honey chilli sauce for a mouthwatering snack.

But here, I have made it from scratch with potato strips. So, to make this recipe, start by deep frying the potato fingers until they are crispy and golden brown and tossing them in a mixture of honey, chilli sauce, and spices to create a sticky and flavorful coating that you’ll be licking clean.

If you have ever eaten honey chilli potatoes, what really achieves the level of crispiness is the double-frying technique used for the potatoes.  This double-frying method ensures that the potato fingers have a crunchy exterior while remaining soft and fluffy on the inside, which allows for a more consistent texture and enhances the overall taste of the dish. Additionally, by frying them twice, any excess moisture is removed, resulting in a longer-lasting crispness.

Ingredients

For Boiling

  • Water
  • Vinegar-1 tsp
  • Salt- to taste
  • Potatoes -3-4 nos. (peeled and cut into thick wedges 1cm thick like French fries)

For Coating

  • Refined flour (Maida) -1/2 cup
  • Corn flour-1/2 cup
  • Salt- to taste
  • Black pepper powder- a pinch
  • Baking soda- a pinch
  • Water -3/4 cup (ice cold)

Sauce & Tossing

  • Oil-(2-3) tbsp
  • Ginger- 1 tbsp (chopped)
  • Garlic – 2 tbsp (chopped)
  • Green chilli -2-3 nos. (sliced)
  • Spring onion bulbs – 2 tbsp
  • Schezwan sauce – 2 tbsp
  • Red chilli sauce – 1 tbsp
  • Tomato ketchup -3 tbsp
  • Soy sauce – 1 tsp
  • Honey-(2-3) tbsp
  • White pepper powder -A pinch
  • Salt- as per taste
  • Onion -1 no (sliced)
  • Capsicum -1 no. (sliced)
  • Water -a dash
  • Corn flour – 2 tbsp
  • Water – 4 tbsp

For Garnish

  • Fresh coriander leaves- a few (chopped)
  • Green spring onions- a few (chopped)

How to make Honey Chilli Potato Recipe Step-by-Step

Step 1: For Boiling

  • Wash, peel, and cut the potatoes into 1 cm-thick slices like potato wedges or potato strips.
  • In a heavy-bottomed pan, add water and bring to a brisk boil.
  • Then add vinegar and salt as per taste, along with the peeled and cut potatoes.
  • Now, cook and blanche the potatoes until they are slightly cooked, or for about 4-5 minutes.
  • After the potatoes are blanched, switch off the flame, strain the potatoes, and transfer them into a bowl. Let the potatoes cool down completely.

Step 2: Prepare the Batter

  • Take a mixing bowl, combine the ingredients (refined flour, corn flour, salt, black pepper powder, baking soda, and chilled water) into the bowl and
  • Whisk the batter mixture continuously to make a semi-thick slurry batter.
  • While whisking the batter continuously, gradually add the water.
  • Then dip and coat the blanched potatoes in the batter.

Step 3: For the Double-frying process

  • Turn on the flame and take a kadhai put it on medium-high flame, then add oil once the oil gets heated.
  • Fry the potatoes in moderately hot oil until crisp and a light golden-brown color appears.
  • After the potatoes have turned a light golden brown, transfer them into a sieve or a plate and let them rest for 5 minutes.
  • Now, increase the flame of the kadhai from medium to high heat. Allow the oil to heat slightly more.
  • To make the potatoes crispy, we double fry the potatoes in hot oil once they have rested, frying them until they become golden brown and super crisp.
  • Further, transfer the potatoes to a bowl or plate. Keep it aside for further use.

Step 4: Preparing the Sauce and coating the potatoes

  • Turn the heat up, put a wok over a high flame, and then add the oil and heat it.
  • Next, add ginger, garlic, and green chili. Gently stir it and cook over a high flame for a few seconds.
  • Then add spring onion bulbs, Schezwan sauce, and the remaining sauces (tomato ketchup, soy sauce, and red chilli sauce) and add honey, white pepper powder, and sprinkle some salt as per taste, along with sliced onion and capsicum. Combine and stir the sauce with the ingredients well, and cook over high heat for 1 minute.
  • Add a little water and bring the sauce mixture to a simmer.
  • Now, in a separate small bowl, add the corn flour and water. Mix it well to prepare a slurry, then add the slurry while stirring the sauce continuously.
  • As soon as the sauce gets thickened, reduce the flame to low heat.
  • Finally, add the prepared fried potatoes along with fresh coriander and spring onion greens, and coat the potatoes well with the sauce. Ensure that you do not cook more at this stage; otherwise, the potatoes will turn soggy.
  • Your honey chilli potato recipe is ready.
