Mix Veg Ingredients

  • Ghee-2-3 tbsp.
  • Cinnamon Stick -½ inch
  • Cloves -2-3
  • Black Peppercorns -10-12
  • Green Cardamom -1
  • Cumin Seeds-1 tsp
  • Fennel Seeds- ¼ tsp
  • Asafoetida(hing) -¼ tsp
  • Green Chilly -1 fresh
  • Ginger – 1-inch grated
  • Turmeric Powder-1 tsp
  • Coriander Powder -2 tsp
  • Cauliflower – 1 small-sized (cut in florets)
  • Potatoes – 2 mediums sized (peeled and diced in medium cubes)
  • French Beans –15-20 (cut into a diamond shape)
  • Carrot – 1 medium (peeled & diced in diamond shape)
  • Salt to taste
  • Curd -1 cup
  • Degi Red Chilli Powder-1 tsp

How to make mix veg

For the preparation of the Curd mixture: In a bowl add curd, green chili, ginger, turmeric powder, degi red chili powder, asafoetida, coriander powder, salt and mix everything properly and keep aside for further use.

Preparation for Mix Veg

  1. Begin by heating a pan and add ghee, once the ghee is hot add cinnamon stick, cloves, black pepper, green cardamom, cumin seeds, and fennel seeds, and allow them to crackle and release their aromatic flavors.
  2. Add cauliflower, potatoes, French beans, and carrots to the pan sprinkle some salt and saute for a minute.
  3. Pour the prepared curd mixture over the sauteed vegetable in the pan and combine it well.
  4. Keep sauteing the mixture for another 4-5 minutes to let the flavors blend.
  5. Then cover the pan and let the vegetables cook until they are tender enough and fully cooked.
  6. Remove on a serving bowl and garnish with fresh coriander leaves and enjoy this mixed veg dish.
